Ever get the craving for a s'mores in the middle of winter? Instead of trekking outside in the freezing temps to make a fire, you can stay inside and make this right in the oven with all the chocolatey, gooey, crunch you can handle!
Now this recipe I make in small batches because it... is... RICH!
You Will Need:
2 - 3 cups Vegan Marshmallows (I use Dandies Original Marshmallows )
1 cup Vegan Chocolate Chips ( EnjoyLife Vegan Chocolate Chips.
I package sleeve of graham crackers ( I use an off brand because they don't contain animal products. )
4 tbs. Vegan Butter ( I use Earth Balance. I get mine from Target. )
Preheat oven to 350°. Spray bottom of round or square 8" pan. Crumble graham crackers into a medium bowl. Add butter to a small, microwave safe bowl and melt for 45 seconds ( Longer depending on microwave. ) Pour butter into the graham cracker bowl and mix throughly until well blended.
Pour mixture into greased pan and press into bottom and corners. Next sprinkle chocolate chips onto graham cracker layer. Next add a single layer of marshmallows, spacing them at least half inch apart because they do expand and melt when baked.
Place pan in a cookie sheet or parchment paper and place on middle rack of oven. Bake for 8 - 12 minutes, enough to where the marshmallows are toasted and melted. ** Be careful the marshmallows with expand. **
Let cool. Cut. Dig in.
