If you're like me, sometimes you crave the simple comfort foods.
Especially after around dinner time when all you want to do is crash. This Quinoa Gluten free Vegan Crust recipe is a big hit with everyone. And it's diverse too! Use it for pizzas, bruchetta, or bake a little longer for croutons in a salad. By using quinoa, you also have the protein you need for a perfect dinner meal!
**Important** Measure out 1 1/2 c. of quinoa into a plastic storage container and fill with water until submerged. Soak overnight. Cant wait? Let soak for at least 6-8 hours.Preheat oven at 450°
1 1/2 c. of your favorite quinoa (soaked overnight)
1 tsp. baking powder
1/2 heaping tsp. salt
1/2 c. water
1 tbs. olive oil (set aside)parchment paper* I add some of my favorite herbs and spices into this mix as well. Like basil, oregano, garlic or chili powder. Just a pinch will do but completely optional.
Rinse you quinoa. Then add all of your ingredients, except olive oil, into the blender. Blend for about 2 – 3 minutes or until the quinoa looks well pureed.
on a cookie sheet (or round pizza sheet) spread parchment paper to cover entire surface
add your olive oil to the parchment paper and rub all over to cover the paper
pour your quinoa mixture onto the parchment paper and spread out evenly over paper
bake in oven for 12-15 minutes, then take out and carefully flip crust over and bake for another 3-5 minutes
take out and carefully top your pizza with your favorite sauces, toppings and vegan cheezes.
pop back in the oven until cheeze is melted
I always put it on broil for the last couple minutes at get that top toasted. Then just take from the oven, slice and serve! X O - Enjoy!
